Kitsy’s Bacon, Ham & Broccoli Quiche

Kitsy’s quiche makes a great breakfast or light dinner.

Bacon, Ham and Broccoli Quiche

  • 1 Pilsbury refrigerated pie crust
  • ½ cup scallions, chopped
  • ½ cup broccoli cut into very small pieces
  • 6-8 oz. Swiss or Gruyere cheese (or a combination of the two cheeses), cubed
  • ½ to ¾ cup chopped ham (Kitsy adds bacon for even more flavor)
  • 3-4 eggs, beaten
  • 1 ½ cups milk
  • nutmeg
  • salt and pepper

Line a pie dish or quiche form with the pie crust and prick the bottom of the crust with a fork to keep it from ballooning up. Bake it 5 minutes only in a preheated 450 degree oven. Pie pans are usually smaller than quiche dishes. Use smaller amount of ingredients for pie pan, larger amount if the quiche dish is larger.

Sprinkle the veggies on the bottom of the crust. On top of them spread the cheese cubes over veggies and then spread the ham pieces evenly over the cheese.

Combine and beat together the eggs with the milk, nutmeg, and a little salt and pepper until well blended. Pour over the ham and cheese. The milk should come up to the top of the cheese and ham pieces.

Place strips of aluminum foil over the outer edge of the pie crust.

Bake the quiche for 15 minutes at 450 degrees.

Reduce heat to 350 and bake for another 30-45 minutes or until knife comes out clean.

Serve hot or well chilled.
